Mexican Rice is a easy and quick vegetable rice when you don’t have much time in your hand. It requires daily veggies and is quickly prepared.
Ingredients:
1 sliced onions
7-8 garlic cloves
1 tsp red chilli powder
1 tsp soya sauce
2 tbsp Salted Butter while cooking rice
2 tbsp Salted Butter while cooking veggies
1 tbsp oil while cooking rice
2 tbsp oil while cooking veggies
Water as required
Salt to taste
4 bowls of washed and soaked rice
Veggies: Cleaned and chopped and as per your choice
Cauliflower(1/2 bowl)
Cabbage(1 bowl)
Capsicum(1/2 bowl)
Carrot(1/4 bowl)
Preparation Time :
15 minutes
Method:
Heat oil in a pan.
Add crushed garlic and sliced onions, saute till onions are pink and translucent.
Add butter and saute.
Now add soaked rice and stir gently so that the rice doesn’t break. After the rice becomes a little light add hot water to it. Add salt and cover with lid. Let it cook.
In another pan, add oil and butter. Then add veggies and red chilli powder . Stir.
Add soya sauce and salt as per taste.
Once cooked, turn off the fame and cool it down a little.
Add the cooked rice to the vegetables and mix.
If you like, you can top it with sliced and fried onions while serving.
Tip : While making the Mexican Rice Recipe care should be taken that the veggies are not over cooked.
